Hi guys! I haven't posted a recipe in a little while so today I wanted to share my arroz con atun that I shared on snapchat last night. I love that you guys love my recipe videos on there and decided to share the super simple recipe here. This is a simple, different and delicious alternative to your typical arroz con pollo. It's great for days when you forget to take out the meat from the freezer too. I typically make it with Ecuadorian tuna because it is so flavorful but you can use any tuna of your choice.

Servings: 4
Ingredients
3 Cups of Rice
2 Cans of Tuna
1/4 Cup of Red Onions
1 cup of Frozen Peas and Carrots
Cilantro to Taste
2 Tablespoons of Virgin Olive Oil
1 Tablespoon of Soy Sauce

Make your yellow rice as you normally would. While that's cooking up start on your tuna. In a wok style pan add your olive oil. mix it your onions and add the soy sauce. Let it cook for about 3-4 minutes and add in the peas and carrots. Mix it all up and let it cook for another 4-5 minutes on medium low flame. Continue mixing it in. Once the onions have softened up and the peas and carrots are nice and soft - you are all done!
Mix in with the rice and top it off with cilantro to taste! Mix it and voila.
